類胡蘿蔔素（Carotenoid）是一種有機色素，存在天然的植物中，且存在於一些行光合作用的藻類中，此外某些類型的細菌和真菌也擁有這些化合物。目前已知的類胡蘿蔔素有超過600種。其中可分為兩大類，也就是葉黃素與胡蘿蔔素。
